The other day I saw on a different blog a recipe for homemade wheat crackers. I used the recipe from http://www.grainmillwagon.com/homemade-wheat-crackers/ as my inspiration, but wanted to make a cracker that was dairy free so my whole family could enjoy them {I have a daughter and a father-in-law that cannot eat dairy}. Instead of using butter, I just substituted olive oil and they turned out great!
Tonight for dinner we had homemade hummus {which will *hopefully* be one of my next posts!} served with these homemade Wheat Thin-like crackers and celery sticks. These were a hit with the whole family! I only wish that we had made more that way there would be some left for tomorrow! I will most definitely be making these tasty crackers again…maybe a triple batch instead of just a double batch next time! 🙂 Enjoy! -Shelley.
Wheat Crackers
1 1/2 c whole wheat flour {I used freshly ground whole wheat white flour}
1 1/2 T sugar
1/2 t salt + more for sprinkling
4 T olive oil
1/4 c water {may need more or less, depending on moisture in air…I used a bit more to make sure my dough came together well}
In a mixing bowl, combine flour, sugar and salt, mix well.
Add olive oil and cut in well with a fork until completely combined into flour.
Add water and mix in well until dough can be pinched together and there aren’t any dry spots.
Knead together a couple of times and bring together to form a ball.
Roll out very thin. The crackers will not raise, so they will be as thin as you roll them out.
Cut into whatever shape and size of cracker you would like. I cut my dough with a pizza cutter and made them about the size of store bought Wheat Thins.
Sprinkle with more salt.
Transfer to a cookie sheet.
Bake in a 400 degree oven for about 15 minutes or so, or until golden brown. {Check after 10 minutes to make sure they aren’t too brown. The length of time it takes to bake depends on the thickness and size of the crackers.}
Let cool and enjoy!
After crackers are completely cool they may be stored in an air tight container to enjoy another day!

Jeannie- my kids helped make them and cut out their own shapes of crackers with cookie cutters. It was fun!
