Homemade Yellow Cake Mix {Dairy & Non-Dairy Version}

20131007-132848.jpgThere are many dessert recipes out there that call for using a boxed cake mix in the recipe. The problem that I have run into in the past has been that 1} I don’t have a boxed cake mix in the pantry or 2} I don’t have a boxed cake mix that is dairy or soy free…which has been an important thing to look at in our family because of food allergies.

Because of the previous comments {and realizing that homemade is usually just about 100% better tasting}, I normally just make my cakes from scratch…when I have the energy and desire to do so. Having a mix on hand usually makes the desire to make something from scratch that much easier! To help make your homemade cake-baking easier on you as well, I thought I would post this simple yellow cake mix in both a dairy and non-dairy version that I adapted from www.chickensintheroad.com. It’s seriously super, super simple! So, whether you want a mix on hand to be able to whip up a cake in a jiffy or you want to be able to use it for a “dump cake” or other dessert that calls for a cake mix, hopefully this will help you out! The dairy version calls for using powdered milk and the non-dairy version just leaves the powdered milk out. When using the dairy-free version just add some sort of milk {whether it be dairy, coconut, almond, soy, etc.} when mixing the cake batter up instead of using just water. Enjoy! -Shelley.

Homemade Yellow Cake Mix:

In a mixing bowl combine flour, sugar, baking powder, salt and milk powder {if using for the regular version}.

Whisk well to combine.

Transfer to an air-tight container or ziplock bag.  Label and date and store for later use. Tip: It is good to keep mixes like this in the freezer until ready to use to decrease the chance of bugs taking residence!

Yellow Cake Mix Recipe

This homemade yellow cake mix is about the standard size of an 18.25 oz mix

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 c granulated sugar
  • 1 T baking powder
  • 1/2 t salt
  • 1/2 c dry milk powder

Dairy-Free Yellow Cake Mix Recipe

  • 2 cups all-purpose flour
  • 1 1/2 c granulated sugar
  • 1 T baking powder
  • 1/2 t salt

Directions

  1. In a mixing bowl combine flour, sugar, baking powder, salt and milk powder {if using to make the regular version}.

Yellow Cake Mix Baking Directions

*Pre-heat oven to 350 degrees

Bake times:

  • cupcakes — 12-15 minutes
  • 8″ – 9″ cake rounds — 20-25 minutes
  • 13″ x 9″ pan — 35-40 minutes
  • tube or bundt pan — 45-50 minutes

Ingredients

  • 1 Yellow Cake Mix
  • 3/4 c water {or some sort of milk if using a cake mix without the powdered milk}
  • 1 t vanilla
  • 1/2 c oil or melted butter
  • 3 eggs

Directions

  1. In a large mixing bowl pour in Homemade Yellow Cake Mix and add water, vanilla, oil/melted butter and eggs.
  2. Mix everything together and then beat on high for 2 minutes with an electric mixer.
  3. Pour batter into a greased and floured cake pan{s}.
  4. Bake at 350-degrees, using the baking times for your particular pans.
  5. Test for doneness by inserting toothpick into center of cake. If it comes out clean, or with a few crumbs the cake is done. Make sure not to over-bake because you don’t want a dry cake!

      I would imagine that this would work as a base mix for making cookies. I haven’t used it for that as of yet, but have used it for “dump cake” recipes and it works well. If you try it, let me know how it works!
