Not too long ago I posted a recipe for Whole Wheat Pumpkin Oat Muffins. They were good, but had a lighter and chewier texture. What I was in the mood for the other day was a pumpkin muffin that had more of a cake-like crumb and consistency. I played around a bit and came up with these Whole Wheat Pumpkin Spice Muffins and I couldn’t be happier! If you are looking for a whole grain, spiced, pumpkin muffin I believe this is a recipe for you! Let me when you try it how you like it! Enjoy! -Shelley
Whole Wheat Pumpkin Spice Muffins
*Makes approximately 24 muffins
*Pre-heat oven to 350 degree
Bake time: approximately 18-22 minutes
2 c whole wheat white flour {I use freshly ground flour from my WonderMill}
1 T baking powder
2 t baking soda
1 T + 1 1/2 t pumpkin pie spice
1/2 t salt
1 1/2 c light brown sugar
3/4 c applesauce
1/2 c oil
2 t vanilla
3 eggs
1 15-ounce can pumpkin puree {or 1 3/4 c fresh pumpkin puree}
In a mixing bowl add whole wheat white flour, baking powder, baking soda, pumpkin pie spice and salt. Whisk together.
In another mixing bowl combine brown sugar, applesauce, oil, vanilla and eggs. Whisk to combine well. Add pumpkin puree to this mixture and mix well to combine.
Add flour mixture to pumpkin mixture and whisk until well combined.
Fill greased muffin tins about 3/4 of the way full.
Bake in a pre-heated 350 degree oven for about 20 minutes or until a toothpick inserted in center comes out clean. Do not over-bake to avoid the muffins drying out.
Transfer muffins to a wire rack to cool. When cool, transfer to an airtight container if not eating right away.
These muffins can be eaten as-is, sprinkled with powdered sugar, topped with a cream cheese frosting, or served with a plop of whipped cream or cool whip {that is what I did because we just happened to have a container of cool whip open in the fridge. I know it takes away from the healthy factor…but just adds to the extra-good factor if you ask me! There is just something oh-so-good about a very healthy serving of cool whip added to pumpkin sweets….mmm!}

Oh my word! These are amazing! I decided to make somewhat healthy muffins for my toddler and these turned out awesome. I even left out some of the sugar and they were still great 🙂 thanks for the recipe!
