Light and Fluffy Mint Oreo Buttercream Frosting

Mint Oreo Buttercream Frosting

Ingredients

  • 2 sticks butter, softened
  • 2 1/2 cups powdered sugar
  • 1 tsp mint extract
  • 1/2 tsp vanilla extract
  • 6 Mint creme Oreos, crushed plus
  • 12 Mint creme Oreos to decorate the tops of the cupcakes

Directions

  1. Whip butter, powdered sugar, mint extract and vanilla extract with a mixer on high speed for 5 minutes, scraping sides of bowl as needed, until the buttercream is light and fluffy.
  2. Crush the Oreos in a ziplock bag using a rolling pin {or alternately use a food processor and pulse to pulverize}.
  3. Fold in crushed Oreos to the icing mixture until just blended. If you over mix it will turn the icing an ugly grey color, which makes the final product much less appealing!

Tip: If you are going to use a piping bag to ice the cupcakes, be aware that the crushed cookies have a tendency to clog the tip. To help avoid this, only use the cookie portion {and omit the mint creme center} and crush cookies very finely in a blender or food processor before folding into the icing.
