Whole Wheat Oatmeal Applesauce Muffins

Oatmeal Applesauce Muffins….Whole Wheat Applesauce Muffins….yum! These muffins are a regular item for breakfast (and then later in the day snacks) at our house. These slightly sweet, whole grain muffins fill up your tummy and leave you satisfied, without feeling *too* guilty! My whole family digs into these and usually we are all wishing for more (that is where making a double batch comes in handy…breakfast and snacks taken care of for a couple of days)! Making a double batch can also allow you to freeze some for a great breakfast at a later date when you don’t have the time or ambition to bake! I promise, these Oatmeal Applesauce Muffins made with whole wheat flour and oats won’t leave you disappointed! I hope you all will enjoy them as much as our family does! -Shelley.

Oatmeal Applesauce Muffins:
*Pre-heat oven to 400 degrees

1 1/4 c whole wheat flour (I ground my own and used whole wheat white flour)

1 1/2 t baking powder

3/4 t baking soda

1/2 t salt

1 1/2 c oats

1 t cinnamon

1/2 c packed brown sugar

1 c unsweetened applesauce

1/2 c coconut milk (or whatever type of milk you want to use)

3 T oil (I used coconut oil, any kind of vegetable oil or olive oil works too!)

1 egg (or if you are wanting to make an egg-free version use Ener-G egg replacer for the equivalent of 1 egg)

Topping:

1/4 c oats

1 T firmly packed brown sugar

1/8 t ground cinnamon

1 t coconut oil, melted (or butter if you aren’t concerned about it being dairy free)

*Mix flour, baking powder, baking soda, salt, cinnamon and oats in a large bowl and mix together well.

*In a separate bowl whisk together brown sugar with egg.

*Add vanilla

*Add milk

*And add applesauce…Whisk all wet ingredients well, set bowl aside.

Now it’s time to make the topping that, really…well…just makes the muffin that much better!

*In a small bowl combine the 1/4 oats, 1/8 t cinnamon and 1 t butter/oil and mix well with a fork.  It is okay if it is still a little crumbly because it is a crumble topping! (The picture seems to be a bit blurry, I do apologize!)

You now have your three bowls of: 1) flour mixture 2) wet mixture 3) topping mixture…

*Combine the wet ingredients with the dry ingredients and mix well.

*Grease a muffin tin and try to divide batter as evenly as possible between the 12 sections.

*Sprinkle a bit of the topping on each of the muffin sections and again, try to divide as evenly as possible.  (I personally like eating the muffins that end up having a little extra of the goodness on top!)

*Bake in a pre-heated 400 degree oven for 20-22 minutes.  Enjoy!!
