Gluten-Free Pancake and Waffle MixIn the past I have posted my recipe for a Whole Wheat Pancake Mix. Since we have been trying to cook and bake things gluten-free lately, I decided to whip up a batch of Gluten-Free Pancake and Waffle Mix to have on hand for some easy, gluten-free breakfasts! I recently wrote a post highlighting the making of some Gluten-Free Waffles. The mix that I am sharing with you today will make it even easier to make a quick breakfast of pancakes or waffles, without the hassle of measuring all of the ingredients every time you make them.

The Gluten-Free All-Purpose Flour that I use in this recipe is made cheaper for me because of the fact that I can use my WonderMill Electric Grain Mill to grind some of my own flour that goes into the mix, instead of having to buy the more expensive already ground flours from the store. For instance, buying bags of white and brown rice {especially if they are bought in bulk} and grinding what I need when I need it, is a whole lot cheaper and fresher than buying the already ground flour from the store or online. I mean, who knows how long it has been sitting around? This is important to me {especially since I live in the country} because bugs do like to find their way into whatever food items are sitting around. Not to mention that the nutritional value of fresh flour is much greater than ones that have been sitting idle for a while. I have owned the WonderMill for a few years now and it is probably one of the best investments that I have made, and I would recommend it to anyone who bakes a lot, or for those who are trying to find a way to make cooking/baking with allergies or food sensitivities more financially realistic.

Like I said, this mix can be made both into pancakes and waffles. I will write the instructions for what you need to add for each below the ingredients list for the different sized batches. Make a lot or a little, but let me know how you like it. Enjoy! -Shelley.

Gluten-Free Pancake and Waffle Mix

1 batch:
1 1/2 c Gluten-Free All-Purpose Flour
3/4 t salt
2 T sugar
2 t baking powder

2 batches:
3 c Gluten-Free All-Purpose Flour
1 1/2 t salt
4 T sugar
1 T + 1 t baking powder {or 4 t}

4 batches:
6 c Gluten-Free All-Purpose Flour
1 T salt {or 3 t}
1/2 c sugar {or 8 T}
2 T + 2 t baking powder {or 8 t}

8 batches:
12 c Gluten-Free All-Purpose Flour
2 T salt
1 c sugar
5 T + 1 t baking powder

In a small bowl combine salt, sugar and baking powder. Whisk together well.

In a large mixing bowl measure out the Gluten-Free All-Purpose flour and whisk in the salt, sugar and baking powder mixture until it is completely mixed together.

Gluten Free AP Flour Mix

Transfer to an air-tight container or plastic bag and seal. Store in the refrigerator or freezer to help retain freshness until ready to use.

Gluten-Free Pancake and Waffle Mix

Directions For Making Gluten-Free Pancakes Using The Mix:

Mix together:
1 1/2 c GF pancake and waffle mix
2 eggs
1 1/4 – 1 1/2 c milk
*Use less if you like thicker pancakes, more if you like thinner pancakes
2 T melted butter or oil
1/2 t vanilla {optional}

In a mixing bowl whisk eggs. Add milk and whisk together until completely combined. Add melted butter {or oil} and vanilla and stir until combined. Measure out and add GF pancake mix and whisk to combine. Drop by about 1/3 cupful/pancake onto a hot, greased griddle. Flip when bubbles form and start to pop and edges dry out a bit. Cook until golden on the other side. Enjoy!

Directions For Making Gluten-Free Waffles Using The Mix:

Mix together:
1 1/2 c GF pancake and waffle mix
2 eggs
1 1/2 – 1 3/4 c milk
1/4 c melted butter or oil
1/2 t vanilla {optional}

In a mixing bowl whisk eggs. Add milk and whisk together until completely combined. Add melted butter {or oil} and vanilla and stir until combined. Measure out and add GF pancake and waffle mix and whisk to combine.

Pre-heat a waffle iron and pour batter by about 1/4 cupful onto the hot, greased waffle iron. Follow the directions for your specific waffle maker, but cook until batter is cooked through, approximately 3-4 minutes.

The end result is fresh, delicious gluten-free pancakes and waffles…made easier by having a mix already on hand!

  1. I also add a splash of lemon juice, a pinch of cinnamon, and a few fresh blueberries after I pour the pancakes onto the griddle. They are a favorite at my house!!
