Stuffed Onions

If you want to try something both different and tasty that anyone can enjoy, this may be the dish for you. This is the perfect meal to serve family, first time guests, or make for a date night!

Ingredients

The Stuffing

  • 3-4 Large White Onions
  • 1 Pound Ground Pork or Beef
  • 1 Large Carrot – Diced
  • 1 Bell Pepper – Diced
  • 3 TBSP Minced Garlic
  • 1 Tomato – Diced
  • 2 TBSP Tomato Paste
  • 1 Cup White Rice – Rinsed
  • 2 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp adobo seasoning
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 2 tsp oregano
  • 1/4 cup finely chopped parsley

The Sauce

  • 1 TBSP Butter
  • 2 TBSP Tomato Paste
  • 2 Cups Beef Broth
  • 1 tsp Salt

Directions

  1. To a bowl, add ground meat, rice, tomato paste, garlic, carrot, tomato, bell pepper, parsley, and other seasonings. Mix well and set aside.
  2. Peel the Onions, and cut off each end of the onion. Then, place the onion flat side down. Cut it down the middle, starting from the center and cutting to the outer edge. Make sure not to cut it in half. Repeat this with each of the onions.
  3. Boil a pot of water. Once it is at a rolling boil, at the onions and cook for about 15 minutes.
  4. Remove the onions from the water and rinse with cold water. The layers of the onions should easily pull apart. Be careful not to rip the onions as you separate the layers!
  5. Once the layers are cooled and separated, begin adding the filling. Place 1-2 TBSP of filling into the center of an onion layer, then roll it up. Then place the rolled onion seam side down in a pan. Continue this step until all of the onion layers are used and filled in a circular pattern in the pan.
  6. Next, begin the sauce by adding butter, tomato paste, beef broth, and salt into a pot. Heat it to a simmer.
  7. Pour the heated sauce over the stuffed onions.
  8. Cover the pan in foil and place in an oven heated to 425 degrees Fahrenheit. Bake covered for 45 min, then remove foil and bake uncovered for another 15 minutes (this should cause the onions to brown on top and caramelize).
  9. Remove from onion, serve and enjoy!
