Savory Cream Corn!

Today’s post is a super doctored up version of cream corn. If you normally have cream corn, or just plain old corn, as a holiday side dish why not add my recipe of Savory Cream Corn to your menu this Thanksgiving or Christmas?  It usually ends up on our table for most holiday or family gatherings.  Golden sautéed onions….soft roasted garlic….creamy butter and cream cheese….savory spices… All make this dish worthy of an appearance at your holiday feasts!*Shelley.

Savory Cream Corn Recipe:
2 – 12 oz packages frozen corn
1 – 8 oz package cream cheese
4 T butter (1/2 stick)
+ 2 T butter (or oil) for sautéing onions in skillet
1 large onion, chopped
4-5 cloves roasted garlic (see my Roasted Garlic Recipe) or 2 cloves garlic, minced
1 package Sazon Goya seasoning (in the orange package)
Parsley, Pepper, Cilantro & Paprika (to taste)
*Chop onion finely.  If you are using raw garlic (about 2 cloves) mince finely.  If using roasted garlic cloves because the flavor is more mild, go ahead and mash about 4-5 cloves.
*Heat a large skillet over medium high heat, add the 2 T of butter/oil.
*Add onions and garlic to skillet, season with fresh cracked pepper, and saute until a golden brown color.
*Pour frozen corn into skillet and mix until combined.  Cook a few minutes to heat corn through, stirring as necessary.  This is corn that we froze from the garden this summer.  I think that a 12 oz frozen package from the store ends up being about the same amount as one of these packages.
*Add Sazon packet, a few good sprinkles of paprika.
*Make a “well” in the center of the corn mixture and add the butter and cream cheese.  Allow to melt a little bit and mix into corn mixture.  Continue to mix until cream cheese and butter is completely melted.  Turn temperature to a medium-low setting.
*Add about 1/4 c of milk to pan to “de-glaze” the bottom of the pan and to make mixture not so thick.  Feel free to use a little bit more, or a little bit less as necessary.
*For added color and flavor add some parsley (fresh or dried…I only had dried but fresh would be great!)
*For even more color, flavor and added “freshness”  add a little bit of chopped cilantro.  If you have to run down to the garden across the road to see if any cilantro has survived the past couple weeks of freezes feel free to do that.  If you happen to find some, like I did, grab a handful, rinse it off and chop some up and throw it in.  Or, you could just buy a bunch at the store…it might be easier! 😉
