This recipe for a Candied Sweet Potato Casserole has become a regular side dish at dinners for Thanksgiving and Christmas in our family. I wasn’t sure whether to call it “Sweet Potato Bake,” “Candied Sweet Potatoes,” or “Sweet Potato Casserole.” Because I couldn’t decide between the three, combining the names seemed logical to me…and so that is what I did!
I received this recipe from my brother-in-law, whose mom has made it for years. This recipe is enough for a 2-quart baking dish so if you are wanting to make a 9″ x 13″ size I would recommend doubling the recipe that is posted. This Candied Sweet Potato Casserole is a great accompaniment to any holiday dinner. Candied Sweet Potato Casserole
*Fits a 2 quart casserole dish, or a 9″ x 9″ dish
*Pre-heat oven to 325 degrees
*Bake time: 45-55 minutes
3 c cold, mashed sweet potatoes
1 c sugar
1/2 c milk
1/2 c butter, melted
3 eggs
1/2 t salt
1 t vanilla
Topping:
1/2 c brown sugar
1/2 c chopped pecans
1/4 c flour
2 T cold butter
In a large mixing bowl combine mashed sweet potatoes, sugar, milk, melted butter, eggs, salt and vanilla. Mix well to combine.

Tip: sweet potatoes can be cooked, mashed and frozen in specific quantities making cooking your favorite recipes that much easier! Just take out of the freezer and thaw in fridge the night before it is needed!
In a separate mixing bowl add brown sugar, pecans, flour and cold butter. Using a pastry cutter {or a fork} cut butter into the mixture and make sure everything is well combined.
Grease a 2-quart baking dish and pour sweet potato mixture into greased dish.
Evenly sprinkle pecan topping over the sweet potatoes.
Bake uncovered in a 325 degree oven for 45-55 minutes.

Mary- Happy Thanksgiving to you as well! We had an early Thanksgiving dinner tonight with Jeff, Loida and their family. We made these sweet potatoes and another one with marshmallows as well. Both are good, but I like the crunchy topping with the nuts!
