Cook Time: 30 Minutes / Servings 4
Ingredients
- Boneless Pork Tenderloin – 2 Pack
- 1 Shallot – Minced
- 2 TBSP Minced Garlic
- 1 Sprig Thyme – Minced
- 1/2 Cup Balsamic Vinegar
- 1/2 Cup Chicken Stock
- 1/2 Cup Apricot Preserves
- 2 TBSP Salted Butter
- Salt and Pepper (to taste)
- Olive Oil
Directions
- Preheat a skillet with a generous drizzle of olive oil on medium/high heat.
- Preheat the oven to 450 ^F.
- While the pan and oven are preheating, remove Tenderloins from packaging and pat dry. Cut each of the tenderloins in half crosswise. Generously season with salt and pepper.
- When pan is preheated, sear each side of the Tenderloins so they develops a thin brown crust. This should take a total of around 3-5 minutes.
- Once the meat is seared, add to a parchment lined baking sheet. Place in preheated oven and bake for around 15 minutes or until internal temp reaches 160 ^F.
- While the tenderloin is baking, begin preparing sauce in the same pan that you seared the meat. Add minced garlic and shallot to the pan and cook for around 3 minutes, or until they become fragrant and translucent.
- To the same pan, add the balsamic vinegar, chicken stock, apricot preserves, and thyme. Stir until well combined. Bring the mixture to a rapid simmer, stirring occasionally to avoid it from sticking to the pan.
- Once it has reached the rapid simmer, reduce heat to medium/low. Add in butter and salt/pepper. Let the sauce continue to cook until it begins to reduce/thicken, then remove from heat.
- Once the tenderloin is done baking, remove from oven and let rest for 3 minutes before slicing.
- Plate the sliced tenderloin with a side of your choice, and drizzle the sauce over the pork. Serve and Enjoy!
